How to Store and Prep Fresh Lion’s Mane at Home

Fresh Lion’s Mane is generous but perishable. A little care in the first few days is the difference between a mushroom that sears beautifully and one that has gone soft in the drawer.

Storing it

Keep it cold and let it breathe. A paper bag or a container loosely covered with paper towel in the fridge is ideal — it holds humidity without trapping the moisture that turns mushrooms slimy. Avoid sealed plastic. Used within a few days of delivery, the texture stays firm and springy.

Prepping it

Don’t drown it. Lion’s Mane is like a sponge, so skip the rinse; brush off any substrate with a dry cloth or a soft brush instead. Tear it into pieces along the natural grain for a shredded, crab-like texture, or slice it into thick rounds when you want scallop-style medallions. Either way, dry pieces brown far better than wet ones.

Getting ahead

If you have more than you can cook, sear it hard, cool it and keep it — cooked Lion’s Mane holds well for a day or two and reheats without turning to mush, ready to fold into pasta, tacos or a grain bowl. It also freezes better cooked than raw.
